Citrus Grilled Mahi Mahi

1/4 cup orange juice
1/4 cup lime juice
1/2 cup olive oil
3 tablespoons chopped cilantro
2 tablespoons chopped garlic
2 teaspoons salt
1 teaspoon cayenne pepper
5 8-ounce mahi mahi fillets

Make the marinade by combining all the ingredients except the fish and mixing well. Place the fish in a large glass baking dish and cover with the marinade. Cover and refrigerate for at least one hour. Grill the fish on a preheated grill about four minutes each side or until cooked through. Serve immediately.

Herb Marinated Grilled Tuna

2 tablespoons chopped fresh rosemary
4 sprigs fresh thyme
4 sage leaves
2 bay leaves
1/2 cup olive oil
2 tablespoons chopped garlic
Grated zest of one orange
Grated zest of one lemon
Salt and pepper to taste
5 8-ounce tuna fillets

To infuse the herbs into the oil, place the herbs and oil into a small saucepan. Bring to a simmer and cook for about five minutes. Remove from heat and allow to cool. Add the garlic, citrus zests, and salt and pepper. Place the fish in a large glass baking dish and cover with the marinade. Cover and refrigerate for at least one hour. Grill the fish on a preheated grill about four minutes each side or until cooked through. Serve immediately.
